Happy National Fruitcake Day, December 27th

When I discovered late last night that today is designated to celebrate the peculiar delicacy known as fruitcake, my little eyes lit up with a sinister gleam. I am prepped for this, I mused to myself, recalling the sarcastic exchanges with friends over the years, as we argued the pros and cons of this weird holiday food - one that sticks in my mind almost the way it sticks in the teeth of those who dare eat it.

Chillingly sweet? Achingly tough and dry? You got it! 😂 However, fruitcake - also called fruit bread - does have a long history of being a staple in cultures and countries around the world. Originally it was made with candied fruit, nuts, booze and/or dried fruits, sometimes soaked in more alcohol as well. Yum! (I'm guessing the original versions must have packed kind of a punch, right? 😄) The earliest recipe from ancient Rome lists pomegranate seeds, pine nuts, and raisins that were mixed into barley mash, and in the Middle Ages, honey, spices, and preserved fruits were added.

This dessert first became popular in Europe, where different countries adopted their own methods of preparation and ingredients. Starting in the 16th century, sugar from the American Colonies (and the discovery that high concentrations of sugar could preserve fruits) created an excess of candied fruit, thus making fruitcakes more affordable and popular. The 17th century English fruitcake was originally yeast-leavened, and the rum and dried fruit helped extend the shelf life of the cake. source: Wikepedia

Wishing you a happy 2nd day of Twixmas (the strangely confusing time frame between Christmas and New Year's), and an enjoyable Fruitcake Day as well. Cheers!
